Nanna's Anzac Biscuits

"These golden, chewy biscuits have been in our family since Great-Nanna sent them to Grandpa during the war. The secret is the golden syrup — don't skip it! Perfect with a cuppa."

🥄 Ingredients

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup desiccated coconut
  • ¾ cup caster sugar
  • 125g butter
  • 2 tbsp golden syrup
  • 1 tsp bicarb soda
  • 2 tbsp boiling water

    Preheat oven to 160°C (140°C fan-forced). Line two baking trays with baking paper.

    Mix oats, flour, coconut and sugar in a large bowl.

    Melt butter and golden syrup in a small saucepan over low heat. Stir until smooth.

    Mix bicarb soda with boiling water. Add to butter mixture — it will foam up!

    Pour wet mixture into dry ingredients. Stir until well combined.

    Roll tablespoons of mixture into balls. Place on trays 5cm apart — they spread!

    Flatten slightly with a fork. Bake 15-20 mins until golden brown.

    Cool on trays for 5 mins, then transfer to a wire rack. Store in an airtight tin.

💡 Nanna's Tips

  • For chewier biscuits, take them out when slightly underdone
  • For crunchier biscuits, bake a few minutes longer
  • Add a pinch of salt to enhance the buttery flavour
  • These freeze beautifully for up to 3 months
